  • 1 large egg, fried or poached
  • 1/2 teaspoon hot sauce
  • Salt and pepper to taste
  • 1/3 cup cooked spinach
  • 1/2 teaspoon chopped fresh chives

Instructions

  1. Toast the slice of sweet potato for 12 – 15 minutes in the toaster or oven until cooked and starting to brown. Top it with cooked spinach, egg, chives, salt, pepper, and hot sauce.
