- 1 head of romanesco, washed and cut into florets

- Fresh parsley for garnish
Instructions
- Preheat your oven to 425°F.
- In a large bowl, toss romanesco florets with olive oil, minced garlic, breadcrumbs, Parmesan cheese, dried thyme, salt, and pepper until evenly coated.
- Spread the coated romanesco in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 20-25 minutes or until the romanesco is tender and the crust is golden brown, tossing halfway through for even cooking.
- Remove from the oven and garnish with fresh parsley.
