- 2 cups durian flesh, frozen
- 1 can (14 oz) coconut milk
- 1/2 cup sweetened condensed milk (adjust to taste)
- 1/4 cup honey or agave nectar
- 1 teaspoon vanilla extract
- Pinch of salt
- Chopped nuts or toasted coconut for garnish (optional)
Instructions
- Ensure the durian flesh is frozen. Remove the seeds and cut the frozen durian into smaller chunks.
- In a blender, combine the frozen durian chunks, coconut milk, sweetened condensed milk, honey (or agave nectar), vanilla extract, and a pinch of salt.
- Blend until smooth and creamy.
- Transfer the blended mixture to a lidded container and place it in the freezer for at least 4 hours or until firm.
- Allow the durian coconut ice cream to soften slightly at room temperature before serving.
- Scoop into bowls or cones.
- Garnish with chopped nuts or toasted coconut if desired.
