This mouthwatering delicious brisket sandwich is cooked to perfection and added to a toasted bun with lettuce and a delectable sauce.

- To taste Traeger prime rib or beef rub
- 1 (6-8 lb) brisket trimmed
- 1/4 cup yellow mustard
- 1/2 cup Traegar BBQ sauce
- 1/2 cup ketchup
- 3/4 cup mayonnaise
- 1/4 cup chopped pickles
- 10 large brioche buns halved
- Shredded lettuce, for serving
- Sliced pickle, for serving
- Hickory pellets
Instructions
- First, season the brisket with Traeger prime rib or beef rub, then wrap it in plastic wrap and put it in the fridge for 12-24 hours.
- Next, preheat the Traeger to 180℉ for 15 minutes with the lid closed.
- Insert the probe into the thickest part of the brisket, then place it on the grill grates, close the lid, and smoke it for 4 hours.
- Then turn the temperature up to 250℉ and cook until the internal temperature hits 160℉. Next, remove it from the grill and wrap it in tin foil.
- Put the brisket back on the grill and reinsert the probe. Cook until the internal temperature reaches 204℉ with the lid closed.
- Take the brisket off the grill and allow it to rest for 30 minutes. In the meantime, make the sauce, mix the ketchup, Traeger BBQ sauce, mustard mayonnaise, and pickles together.
- Unwrap and slice the brisket against the grain. Spread the sauce over the brioche buns then top with lettuce, brisket, and pickles. If you are a cheese lover, feel free to add some grated cheese.
