There are hundreds, if not thousands, of zucchini bread recipes out there. With ours, we've kept it simple in both ingredients and steps. There's no need to add lots of extra pizzazz to zucchini bread. It stands strong on its own. The nutmeg, cinnamon, and vanilla will add plenty of great flavor.
You'll need about two cups of zucchini for this recipe. If you're overloaded with zucchini, you can make plenty of loaves with this recipe! Have your kids give you a hand with the baking. Baking and cooking with kids is always a fun experience, especially if this is the first time they're helping you in the kitchen.

Ingredients
- 3 eggs
- 1 cup vegetable oil
- 2 cups sugar
- 2 cups zucchini, grated and well drained
- 1 teaspoon vanilla
- 3 cups flour
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- 1 teaspoon baking soda
- 3/4 teaspoon nutmeg
- 1 tablespoon cinnamon
- 1/2 cup raisins (optional)
Instructions
- Mix together eggs, oil, sugar, zucchini, and vanilla; set aside.
- Mix together flour, baking powder, soda, nutmeg, and cinnamon; add to first mixture. Add raisins if desired.
Pour into 2 greased and floured loaf pans. Bake at 350 degrees F for approximately 45 to 50 minutes or until the center springs back when touched.
