Beets are one of the most polarizing vegetables out there. Some people love them, others absolutely despise them. If you're on this recipe, we figure you're in the former camp. Or, maybe you've never tried beets before and want to give them a fair chance. Either way, this recipe is perfect for you.
The use of orange juice concentrate and cinnamon adds extra flavor to this recipe. This dish is very easy to make; the toughest part is probably skinning the beets. Take care to skin them well, while of course being careful not to cut yourself! All of the other steps in this recipe should be very easy and straightforward.
Either serve these beets on their own or as part of a larger dinner. This beet recipe can work great as a side for chicken or pork. If your kids are normally not that interested in eating beets, this recipe may just be a way to get them to eat their beets without much complaining. Summer Sunshine Beets
Ingredients:
4 large fresh beets
1/4 cup frozen orange juice concentrate
2 tablespoons butter
1/4 teaspoon cinnamon
Salt to taste
Directions:
1. Fill a medium saucepan with water and bring to boiling. Add the beets, lower temperature, and simmer for 15 minutes.
2. Drain, then cool under running cold water. Remove the skins and cut each beet into 1/4-inch thick slices.
3. Stir the orange juice and the butter in a small saucepan over medium heat, until well-combined.
4. Stir in the cinnamon and salt.
5. Toss the beet slices in the orange-cinnamon sauce, and heat through. Serve hot.
