Are regular tacos getting boring? Switch it up with these taco sandwiches! Even though this recipe takes a little more time and effort than regular tacos, it's still a quick and easy meal that can be put together on a busy night.
If you need some toppings for your taco sandwiches, chives and sour cream can always work well. Or, try cilantro or lime. These toppings are a great way to change up the flavor of your tacos, without radically altering the overall flavor profile.
Feel free to replace the beef in these sandwiches with whatever else you'd rather use. Chicken, tofu, turkey, and even seafood can all be great substitutions. You may need to shift the seasonings around depending on what filling you're using, so be prepared to do a little experimenting!
If you want to make these taco sandwiches just a little bit healthier but don't want to substitute out the beef, go for leaner beef. 93/7 or 94/6 beef is ideal, but get the leanest that your store has on offer. You can also opt for low- or reduced-fat cheddar cheese. The taste won't be noticeably different, but it will cut down on the calorie and fat content.
Taco Sandwiches
Ingredients:
1 pound ground beef
1 loaf (1 pound) unsliced Italian bread
4 ounces cream cheese, softened
½ cup salsa
2 Tablespoons taco seasoning
1 cup shredded lettuce
1 large tomato, sliced
6 slices cheddar cheese
Directions:
1. In a large skillet, cook beef over medium heat until no longer pink.
2. Meanwhile, cut bread in half lengthwise; hollow out top and bottom of loaf, leaving a ½-inch shell.
3. In a small mixing bowl, beat cream cheese and salsa until blended. Spread inside bread shell, set aside.
4. Drain beef. Stir in taco seasoning.
5. Layer lettuce and tomato in bottom of bread shell, top with beef mixture in cheese. Replace bread top.
6. Serve with corn chips or tortilla chips on the side. Makes 6 servings.
