Description
Pork loin served with a seasoned relish smothered on top is paired with mashed potatoes for a hearty 7 ingredient dinner that’s done in less than a half hour.

- 1 (24 ounce) package refrigerated mashed potatoes
- 4 boneless pork loin chops, ¾ inch thick
- Salt and black pepper
- 2 tablespoons olive oil
- 1 large red onion, quartered and sliced
- 2 medium tomatoes, cut into thin wedges
- ¼ cup red wine vinaigrette salad dressing
Instructions
- Prepare mashed potatoes according to microwave package directions.
- Meanwhile, sprinkle chops lightly with salt and pepper. In a very large skillet heat oil over medium-high heat. Add chops; cook about 3 minutes. Turn chops; add onion to skillet. Cook about 10 minutes more or until chops are done (160°F), turning chops to brown evenly and stirring onion occasionally. Remove chops to 4 serving plates.
- For tomato relish, add tomato and salad dressing to skillet; cook and stir about 1 minute more.
- Serve chops with mashed potatoes and tomato relish. Season with additional pepper.
