- 1 1/2 cups all-purpose flour
- 1 cup Honey Bunches of Oats cereal, crushed
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3 ripe bananas, mashed
- 1/3 cup vegetable oil
- 1/4 cup honey
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup milk
Instructions
- Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
- In a large bowl, combine the crushed Honey Bunches of Oats cereal, flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together mashed bananas, vegetable oil, honey, egg, vanilla extract, and milk.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
