This delicious and easy Mexican Pozole recipe is a popular stew known to be made with corn or maize. In our rendition, we used hominy, which is made with dried maize kernels. While the origins and ingredients of Pozole have a complicated past, it's typically served during some celebrations. This traditional soup is a hearty dish if you're looking to liven up your weeknight meals. The mixture of garlic, onion, and cilantro gives this dish a flavorful punch, while the beef and hominy make it perfect for a filling meal. Top it with lettuce, sour cream, and cheese, and serve it with warm tortillas.
Ingredients:
- 2 lb. lean beef, cubed
- 1 tablespoon olive oil
- 1 large onion, chopped
- 1 clove garlic, finely chopped
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 cup cilantro
- 1 can (15 oz) stewed tomatoes
- 2 oz. tomato paste
- 1 can (1 lb. 13 oz.) hominy
Directions:
1. In a large pot, heat oil, then sauté the beef until no longer pink.
2. Add onion, garlic, salt, pepper, cilantro, and enough water to cover the meat. Cover the pot and cook over low heat until meat is tender.
3. Add tomatoes and tomato paste. Continue cooking for about 20 minutes.
4. Add hominy and continue cooking over low heat for another 15 minutes, stirring occasionally. If the mixture is too thick, add water for desired consistency.
