We've said it before and we'll say it again: lemons are probably the most versatile fruit. There are so many different recipes you can make with lemons, it's refreshing in water or as frosted lemonade, and you can even clean with it. But we love it best when it's paired with chicken, like this healthy lemon chicken recipe. This is probably one of the simpler recipes, and it's absolutely delicious served over pasta noodles. It may taste like summer but this dish can absolutely be served year-round. And we're confident you're picky eaters will love it!
Ingredients:
- 1½ lb. chicken breast tenderloins, skinned, fat removed
- ½ cup fresh lemon juice
- 2 Tablespoons white wine vinegar
- ½ cup fresh lemon peel, sliced
- 3 teaspoons fresh oregano, chopped (or 1 teaspoon dried oregano, crushed)
- 1 medium onion, sliced
- ¼ teaspoon salt
- Black pepper, to taste
- ½ teaspoon paprika
Directions:
1. Place chicken in a 13x9x2 inch glass baking dish.
2. Mix lemon juice, vinegar, lemon peel, oregano, and onions. Pour over chicken, cover, and marinate in refrigerator for several hours, turning occasionally, or overnight.
3. Sprinkle with salt, pepper, and paprika.
4. Cover and bake at 300 degrees F for 15 to 20 minutes. Uncover and bake for added 5 to 10 minutes or until done.
