These corn crisps make for an excellent snack after your kids get home from school. They're also great to pack away in their lunch, so that they have a filling midday meal. Really, the sky is the limit when it comes to uses for this recipe!
The great thing about this recipe, aside from how easy it is, is how short the ingredients list is. You only need four ingredients to make these corn crisps. One of them is really easy to come by- water! You already have butter and salt in your house, so all you need to buy is the corn meal. Cheap!

Corn Crisps
Ingredients:
1 cup corn meal
1 Tablespoon butter
½ teaspoon salt
7/8 cup boiling water
Makes about 2 dozen
Directions:
1. Combine all ingredients. Make balls using 1 Tablespoon mixture for each.
2. Place on well greased baking sheet. With moistened fingers, pat into 3 inch rounds.
4. Bake at 400 degrees F, about 30 minutes.
