Chipotle Red and White Bean Chili
Ingredients:
1 medium onion, chopped
½ pound reduced-fat pork sausage
1 green bell pepper, chopped
1 red bell pepper, chopped
1 (1.25 ounce) package reduced-sodium taco seasoning mix
1 (14.5 ounce) can Mexican-style diced tomatoes, drained
1 (8 ounce) can no-salt-added tomato sauce
1 (15 ounce) can no-salt-added light red kidney beans, rinsed and drained
1 (19 ounce) can cannellini beans, rinsed and drained
2 chipotle peppers in adobo sauce, seeded and chopped plus 2 teaspoons adobo sauce
¼ cup chopped fresh cilantro
Directions:
1. Cook onion, sausage, and peppers in nonstick skillet over medium-high heat until sausage is browned and vegetables are tender, stirring to crumble sausage.
2. Drain sausage mixture, return to pan. Add seasoning mix and next 5 ingredients. Bring mixture to a boil; cover and simmer 5 minutes. Stir in cilantro just before serving.
