Trying to find new ways to get your veggies in can be tough. You're tired of serving vegetables as a side dish, and you've already gone through all of the recipes in your cookbooks. That's when this great broccoli spinach fettucine recipe can come to your aid.
There's nothing complicated about this recipe. Difficult recipes certainly have their time and place, but busy parents need dinners they can easily put together. Since this is a pasta dish, your picky little ones are also less likely to complain about the presence of vegetables.
We've included frozen broccoli and frozen spinach in this recipe to make it as easy as possible for you. Fresh veggies are always nice, but frozen are much more accessible and are often cheaper. If you happen to have fresh broccoli or spinach on hand, however, feel free to use it in this recipe.
You can also swap out the spinach for kale, if you'd like to get a super food in your diet. Super foods are named as such because they're packed to the brim with nutrients. While there has been some disagreement recently over what exactly a “super food” is, kale has repeatedly shown up on lists of these amazing foods. So, there's no going wrong by using it in this recipe!
Broccoli Spinach Fettuccine
Ingredients:
1 package (10 ounces) frozen chopped spinach
2 cups frozen chopped broccoli
½ pound fettuccine
4 Tablespoons butter
3 Tablespoons olive oil
4 cloves garlic, minced
¾ teaspoon salt
½ teaspoon pepper
1 cup sour cream
2/3 cup grated Parmesan cheese
Directions:
1. Bring a large pot of water to a boil.
2. Thaw the spinach and broccoli in a microwave (one at a time). Set the broccoli and spinach aside on paper towels to drain excess moisture.
3. Add the pasta to boiling water and cook until al dente, 10 to 12 minutes, or according to package directions.
4. In a large skillet, warm the butter in the oil over medium heat until butter is melted.
5. Add the garlic and sauté until lightly browned.
6. Increase the heat to medium-high and add the spinach, broccoli, salt, and pepper.
7. Cook, stirring, until the vegetables are heated through (about 5 minutes).
8. Stir in the sour cream and remove from the heat.
9. Drain the pasta and toss it with the vegetables and Parmesan cheese.
