Broccoli Beef Stir Fry
Ingredients for Marinade:
2 teaspoons low sodium soy sauce
2 teaspoons Chinese rice cooking wine
2 teaspoons oyster sauce
1 teaspoon cornstarch
½ teaspoon freshly ground black pepper (or to taste)
Ingredients for stir-fry:
1 pound fresh broccoli (use only the florets)
¼ cup chicken broth
¾ pound thinly sliced beef for stir fry
½ teaspoon freshly grated ginger
3 cloves of garlic (pressed or minced)
2 Tablespoons of Wok Oil (or any high heat cooking oil)
Ingredients for the Sauce:
¼ cup chicken broth
2 Tablespoons oyster sauce
2 Tablespoons soy sauce
2 Tablespoons hoisin sauce
2 teaspoons Chinese rice cooking wine
1 Tablespoon cornstarch
2 cups minute rice, uncooked
Directions:
1. Combine all ingredients for marinade and whisk to incorporate the cornstarch.
2. Add the sliced beef and let marinate for 20 minutes.
3. While beef is marinating, Whisk together ingredients for sauce and let stand.
4. Prepare Minute Rice according to package directions.
5. Heat a large frying pan or wok until very hot (until a drop of water sizzles then evaporates quickly).
6. Add Wok Oil and swirl to coat pan.
7. Add the beef carefully, making sure it lays flat and let cook on one side for a minute before turning to cook the other side for another minute.
8. Add garlic and ginger only for the last 30 seconds of cooking or it will burn.
9. Remove beef from pan and set aside.
10. Place broccoli florets in pan with ¼ cup of chicken broth. Cover and blanch for 2 minutes.
10. Add meat back to pan and pour sauce over both beef and broccoli and let cook for a minute until you see the sauce start to thicken.
12. Serve over cooked rice.
