Picture a balmy, lazy summer evening. Either you're entertaining or you've offered to bring something. This fresh summer black bean salad recipe will complement that beer, margarita, or other frozen concoction. This recipe is extremely close to another recipe. It's known as cowboy caviar and both recipes are just as delicious.
The refreshing cherry tomatoes explode in your mouth while the jalapeno peppers and cilantro create a herby heat-filled bite of their own. This recipe is best served as with tortilla chips and a side of avocado for a rich and fatty addition.
Ingredients:
- 2 cans (15 oz ) black beans, rinsed and drained
- 6 scallions, thinly sliced
- 1 cup cherry tomatoes, quartered
- 1 small yellow bell pepper, seeded and diced
- 2 jalapeno peppers, seeded and chopped
- 1/4 cup cilantro, finely chopped
- 1/4 cup sherry vinegar
- 2 Tablespoons olive oil
- 1 teaspoon dijon mustard
- 1 teaspoon cumin, ground
- 1/2 teaspoon oregano, dried
- salt and pepper to taste
Directions:
Toss all ingredients together and chill for at least an hour.
