This is a traditional scotch shortbread cookie recipe. It is loaded with butter and flavor. They're one of the easiest cookies to make with very few ingredients. Thankfully, due to the simplistic nature of these cookies, you can easily mix and match new flavors with this recipe. These are addicting so beware of the calories!
Shortbread cookies have a long and tenured history in Scotland. Originally started as a way to reuse dough scraps and cooked in a low temp oven until dry to preserve it. Slowly throughout the years, the scraps were replaced with full dough portions, and instead of yeast, butter, and sugar were substituted and shortbread cookies were born.
Scotch Shortbread Cookies
Ingredients:
1 cup (2 sticks) butter, softened
1/2 cup sugar
1 3/4 cups all-purpose flour
1/4 cup cornstarch
Directions:
1. Preheat oven to 350 degrees F (190 degrees C).
2. Cream butter and sugar. Slowly add flour and cornstarch. Mix well.
3. Press dough into a 10×15 inch jellyroll pan, score into bars and prick with a fork.
4. Bake 15 to 18 minutes in the preheated oven, until golden brown.
