How To Cook Prime Rib Roast Perfectly, 4 Ways

Prime rib is a classic cut of beef often used in roasts and for large dinners. It can be cooked with the bone in it and is often served with a pan sauce made with the juices that come out during the cooking process. “Prime” refers to how the U.S. Department of Agriculture grades the meat. If you have a prime rib at home ready to cook, here are four ways you can cook it perfectly.

Grill

To grill your prime rib, heat the grill to 375 degrees. While it is heating, prepare the roast by trimming away any excess fat. Be careful not to trim away too much of the roast, doing your best to keep its overall shape while removing only small bits of fat at a time. Then, cover the roast in olive oil and generously season with your choice of herbs and spices. The basic seasonings include salt, pepper, and garlic powder. Then, place the prime rib with a heat-safe thermometer in the middle of the grill over indirect heat. Close the grill and cook until the internal temperature of the roast is 120 degrees. Once it's reached this temperature, let it rest for 30 minutes before cutting and serving.

  • Preheat the grill to 375 degrees.

Oven baking a prime rib is a great way to bring the internal temperature up without overcooking the outside.

Oven-Baked

To cook your prime rib in the oven, remove it from the fridge to come down to room temperature. While it sits, you can sprinkle it with salt to bring out some moisture. Once the roast is at room temperature, preheat the oven to 500 degrees. Dry off the prime rib with a paper towel, and generously season it with your preferred seasonings. Then, place an oven-proof thermometer into the middle of the roast. Cook in the oven at 500 degrees for about 15 minutes to brown the roast. Then, lower the temperature to 325 and cook for 10-15 minutes per pound of roast. You want the internal temperature to reach 115 degrees for rare, 120 degrees for medium rare, or 130 degrees for medium. It's important to note that it will still cook after you take it out of the oven, so keep that in mind when deciding when you should pull it out of the oven. Once removed from the oven, cover it in tin foil and allow it to rest for 15 minutes before slicing.

  • Allow prime rib to come down to room temperature.
  • Salt while resting to remove excess liquid.
  • Preheat oven to 500 degrees.
  • Pat roast dry and generously season with preferred seasonings.
  • Place a thermometer into the roast.
  • Cook in the oven for 15 minutes before reducing the temperature to 325 degrees.
  • Cook the roast for 10-15 minutes per pound.
  • Check the internal temperature has reached between 115 and 130 degrees.
  • Cover in foil and allow to rest for 15 minutes.
  • Cut and serve.

Crock Pot

To cook your prime rib in the crock pot, allow it to warm up to room temperature. You'll want to sear your roast before placing it in the crock pot. Heat up a skillet and brown each side of the meat first. Then, place the roast in the crock pot and generously season. Cook on low for three to five hours. Using a thermometer, check after three hours that the internal temperature has reached 120 degrees. Once fully cooked, remove from crock pot and allow to rest for 15 minutes before serving.

  • Allow prime rib to come down to room temperature.
  • Sear on a skillet to brown each side.
  • Place in the crock pot and season generously.
  • Cook on low for 3-5 hours or until the temperature has reached 120 degrees.
  • Allow to rest for 15 minutes before serving.

Crock pots and instant pots (pressure cookers) can be a less complicated method of cooking since it's so hands-off, although crock pots are slower and instant pots are much faster.

Instant Pot

To cook your prime rib in the instant pot, make sure the meat is at room temperature. Then season it generously. Using the saute function, brown each side of the roast in the instant pot with a little bit of butter. This will take about five minutes per side. Remove the roast, and using a cup of beef broth, scrape off the bottom of the pot. Then, add the roast back to the pot and cook on high for 12 minutes. Allow the steam to release, and let the roast rest for 30 minutes. Then, check that the internal temperature has reached 115 degrees. If the temperature is too low, close the lid to the instant pot and let it sit for five minutes at a time until it reaches the desired temperature.

  • Allow prime rib to come down to room temperature.
  • Season it generously.
  • Saute on each side for 5 minutes.
  • Remove meat from the instant pot.
  • Scrape the bottom of the pot with 1 cup of beef broth.
  • Add meat back to pot and cook on high for 12 minutes.
  • Allow the steam to release.
  • Do not open the instant pot and let it rest for 30 minutes.
  • Check that the internal temperature has reached 115 degrees.
  • Close the lid for 5 minutes at a time if it hasn't reached the desired temperature.
