Cover slow cooker and cook on low for 4-5 hours or high for 1 ½ to 2 hours.
Use a slotted spoon to remove the chicken and vegetables. Then strain sauce into a small saucepan. Simmer over high heat until it reduces by half, about 4-5 minutes
Add back to the slow cooker with chicken mixture. Add water chestnuts and green onion. Stir.
