Fajitas are a popular dinner choice, especially when chicken has grown boring. This recipe for slow cooker pulled pork fajitas will definitely scratch that fajitas itch you've been having. It's a recipe to keep, for whenever you want something that's both easy and delicious.
This recipe will cook for eight to ten hours on low. Most slow cooker recipes take about this long to cook, which is part of why they're so popular. You can pop this recipe into the slow cooker in the morning, and have a ready-made dinner in the evening. It's a great way to stave off the temptation to just order fast food.
Slow cooker meals like this one make for a great weeknight dinner. They're filling, tasty, and nutritious. Chicken and beef are common meats used in fajitas, but we wanted to take a different approach with pulled pork.
The sour cream in this recipe is optional, but we think it really completes this dinner's flavor profile. If you can't find Mexican-style shredded cheese, a combo of cheddar and provolone can also work. Pick low-fat shredded cheese if you want to cut down on the calories and fat in this dinner.
Slow Cooker Pulled Pork Fajitas
Ingredients:
1 pork boneless loin roast (2 1/2 pound), trimmed of fat
2 tablespoons fajita seasoning (from 3-ounce container)
1 cup thick and chunky salsa
1 bag (1 pound) frozen stir-fry bell peppers and onions, thawed
2 packages 8 inch flour tortillas for burritos (16 tortillas), warmed
2 cups shredded Mexican-style cheese (8 ounce)
1 cup sour cream, if desired
Directions:
1. Place pork in 3- to 4-quart slow cooker. Sprinkle with fajita seasoning. Top with salsa. Cover; cook on Low heat setting 8 to 10 hours.
2. Remove cover from slow cooker. Shred pork using 2 forks. Stir in THAWED stir-fry vegetables. Increase heat setting to High. Cover; cook 30 minutes longer or until mixture is hot and vegetables are tender.
3. Using slotted spoon, place 1/2 cup meat mixture in each warm tortilla. Sprinkle with cheese. Serve with sour cream.
