Macaroni salad is a popular side dish for picnics. It's easy to make, provided you have the right recipe, and pretty much everyone loves it. It sometimes gets overshadowed by potato salad, but despite that many families still end up turning to this dish in the summertime.
This is a wonderful recipe for macaroni salad. It's quick and easy. Simply cook the macaroni, rinse, mix all of the ingredients together, add the macaroni, and chill. Keep in mind that you'll need to chill this salad for at least an hour before serving, so give yourself enough time to make this. This recipe isn't one to make last minute before a picnic!
The pepper, celery, and onion give the macaroni salad some crunch, contrasting the soft texture of the macaroni in the exact way people expect from this dish. The pepper and onion also add a lot of flavor, along with the yellow mustard. Hard cooked eggs add both color and texture.
Since this salad has mayo and egg in it, remember to keep it cold. Keep it out only as long as it takes to serve. This is especially true on a hot day. If you'll be serving this salad at home, you can simply pop it back into the fridge. Otherwise, you'll want a cooler with ice to help keep this salad cold.
Quick and Easy Macaroni Salad
Ingredients:
1 package shell macaroni (cooked)
1 medium green pepper, chopped
1 medium onion, chopped
1/2 cup celery, chopped
1 cup mayonnaise
1 tablespoon yellow mustard
2 hard cooked eggs, finely chopped
Salt and pepper to taste
Directions:
Cook macaroni according to package directions, rinse well.
Mix all other ingredients in a large bowl.
Add drained macaroni and toss well, coating evenly. Chill for at least one hour before serving.
