Sweet and sour chicken can often be found on the menu at Chinese restaurants, but with this recipe you can bring it into your home. It isn't difficult at all to make authentic-tasting sweet and sour chicken. In fact, we're using the crock pot in this recipe to make it extra easy!
All of the ingredients needed for this recipe are easy to find. You may even have several of them on hand already. White vinegar, ketchup, and brown sugar are staples in many homes. You'll need a pound and a half of skinless, boneless chicken breasts for this recipe.
You can either cook this recipe on high or low depending on your preference and schedule. On high, this recipe will finish cooking after three to four hours. On low, you'll need to cook it for six to eight hours. High is a good choice if you want to start this dinner in the afternoon and have it finished by dinnertime.
Some cooks swear that cooking meat on the high setting isn't ideal, since it doesn't tenderize the meat properly. We don't think there's much of a difference. Ultimately, this is down to personal preference and how much time you have available to cook this meal.
Sweet and Sour Crock Pot Chicken
Ingredients:
2 tablespoons ketchup
1 cup water
1/2 cup white vinegar
2 tablespoons soy sauce
1 cup dark brown sugar, packed
1 1/2 pounds chicken breasts (boneless, skinless, cubed)
2 tablespoons cornstarch
2 tablespoons water
Directions:
1. Combine first 5 ingredients in the crock pot and mix well.
2. Add chicken and cook on low for 6-8 hours OR on high for 3-4 hours.
3. At the end of the cooking time, combine the cornstarch and water in a small bowl. Stir into the slow cooker, mixing well to avoid lumps.
4. Cook on high setting for an additional 15-20 minutes, stirring often, until thickened.
